A "Gathering to Taste Laotian Cuisine" was held in collaboration with Koisuru Laos Editing Club, Komatsutei Thammasat, and Denkasha. A variety of dishes representative of Laotian cuisine adorned the table. All of the dishes were authentic. The way the rice was cooked and the taste were exactly like the local taste. Of particular note is that Komatsu-san uses freshwater fish from Lake Biwa and, after extensive research, makes his own fermented seasoning, Pha Daek (fish sauce), which is essential to Laotian cuisine. He showed us his homemade dish along with high-quality Laotian Pha Daek, and its rich aroma completely changed the image of "fishy". Almost no oil was used in the cooking that day. It was a valuable experience to feel the natural and strong flavor. I have a feeling that it will taste even better when combined with herbs, spices, and citrus fruits. It was a fun time to share everyone's thoughts on "what is a sustainable life" through Laotian cuisine.

He has been interested in fish since he was a child, and studied at the National University of Laos for three years during his graduate school years, focusing on the distribution of small fish. Currently, he works at the Kyoto Central Wholesale Market, and regularly serves Laotian cuisine at markets and events in Kyoto, Shiga Prefecture, and other places under the name Komatsutei Thammasat.
